Anthony Bourdain, the man who almost single handedly got me excited about becoming a home cook, once said that if a cheese didn't almost offend him with its stench, he wasn't interested. At the time, I was new to cooking and certainly wasn't into offensive cheeses. As the years rolled on, my skills in the kitchen vastly improved - as did my palette. Slowly, those deeply flavored cheeses became a norm on our kitchen table and I, too, began to crave their borderline stench. Truth be told, I'm now making those cheeses with milk from our dairy cow, Cece. Because of my love for Anthony Bourdain, my love for hand milking my cow each morning, and my love for making cheese, "fromage" seemed a natural photograph to capture. I hope it conveys that sometimes it takes time to gain understanding and even appreciation.
