My niece once told me house always smells of soup. So be it. The last of the givings from the dirt root cellar under our kitchen, each gigantic pot of stock we simmer on the stovetop during the winter is a final celebration of last year's harvest. While our stock usually revolves around lamb or beef bones preserved in the freezer, sometimes the weather is so poorly I avoid making the trek up to the barn to gather them - at which point, vegetable stock is ever more appreciated. Adaptation and making-do are key personality traits of the farmer.
